10/16 + 10/21:
As we continue the final harvesting portion of the fellwoship, today we gathered aji dulces and bottle gourds from Lutheran to take back and process at the main site. To identify peppers that were ready for harvest, all one has to do is check to that they're a saturated darker red with no orange hints. We all took turns processing the peppers, i.e. stomping on them with our feet lightly hosed off and covered in trash bags until every pepper was split and squashed. We then decanted into another plastic bucket, and with a strainer resting on its lip, separate pulp from good seed: all immature seeds floated, while good seed sank to the bottom of the container. We then poured the water and immature seed out until nothing but mature seeds were. Next, we placed the mature seeds on a labeled and paper-lined tray to be stored in the walk-in along with our other processed seed.
Today, Amirah and began harvesting callaloo, which I will continue to do for the two weeks.
